Nourishing soup

This is a nice soup for the summer months as it is filled with a lot of fresh herbs and veggies. It’s simple to make as well and is best served cold.


Equipment needed: high quality blender

Prep Time: ~15 minutes


  • 6 organic and fresh tomatoes
  • 3 medium to large celery sticks
  • 1 juice of a lime
  • 1 cup fresh basil
  • 1/2 cup watercress
  • 1/2 cup coriander
  • 1/4 cup fresh mint or 2 drops of essential peppermint oil
  • 2 Tbsp extra virgin olive oil
  • pepper and sald to taste

Preparation: Cut celery into smaller pieces and tomatoes in have. Then pour all the ingredients, except salt and pepper, into the blender (food processor works as well) and blend on minimum until the ingredients are broken down into small pieces. Make sure you don’t blend on high too keep the textures in the soup. Add salt and pepper in the end to taste for your own liking
